In fact, she is much more than that, but her job as \u201cAssistant Restaurant Manager\u201d can be difficult to define: \u201cleading the brand, the identity of the place, and making sure the whole team is strongly connected\u201d.<\/strong><\/p>\n\n\n\n<p>Having worked her way up the ranks, from waitress to manager, helps her \u201cmake sure everything is going well and in the right direction\u201d, and ensure a comprehensive customer experience.<\/p>\n\n\n\n<p>&nbsp;<\/p>\n\n\n\n<p>She was by no means predestined to work in the hospitality and catering industry. Born in Singapore to a middle income family, her 3 siblings and her were not exposed to travels (\u201cnot part of the family culture\u201d) nor to the dining industry.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>\u00ab When I was a kid, McDonald&#8217;s was the only restaurant I knew! \u00bb<\/p>\n<\/blockquote>\n\n\n\n<p><strong>Her self-confidence was built on encounters and experiences<\/strong>, opening the doors to a world of which she knew nothing, forever shaping her path (she met the love of her life on the journey) and where she now plays a key role.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Jia Ling Lee&#8217;s path:<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1988 : Born in Singapore.<\/li>\n\n\n\n<li>2005 : Made her debut in the F&amp;B industry.<\/li>\n\n\n\n<li>2010 : Started working at restaurant \u201cAu Petit Salut\u201d.<\/li>\n\n\n\n<li>2013 : Started working at Jaan.<\/li>\n\n\n\n<li>2015 : Opening of Odette.<\/li>\n\n\n\n<li>2016 : Odette receives two Michelin stars just 9 months after opening.<\/li>\n\n\n\n<li>2017 : Odette joins Les Grandes Tables du Monde.<\/li>\n\n\n\n<li>2019 : Odette receives its third Michelin star.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-2-plat-mushroom-tea-2-1024x683.jpg\" alt=\"image 2 plat mushroom tea\" class=\"wp-image-41867\" srcset=\"https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-2-plat-mushroom-tea-2-1024x683.jpg 1024w, https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-2-plat-mushroom-tea-2-300x200.jpg 300w, https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-2-plat-mushroom-tea-2-768x512.jpg 768w, https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-2-plat-mushroom-tea-2-1536x1024.jpg 1536w, https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-2-plat-mushroom-tea-2.jpg 1600w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>Like for many, it was first and foremost a student job, a way to finance her Early Childhood education, which led her to work as a waitress in a sushi chain. She quickly \u2013 and almost unwillingly \u2013 rose through the ranks and became manager after 3 years, at only 20 years old.<\/p>\n\n\n\n<p>It was a formative but difficult experience, leading her to question whether she belonged in this industry.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>\u00ab It was a new opening. Too many responsibilities, too little guidance, too young. I wanted to try something else, and ended up working in customer relations and insurance for two years. \u00bb<\/p>\n<\/blockquote>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"684\" src=\"https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-3-plat-odette-1-1024x684.jpg\" alt=\"image 3 plat odette\" class=\"wp-image-41866\" srcset=\"https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-3-plat-odette-1-1024x684.jpg 1024w, https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-3-plat-odette-1-300x200.jpg 300w, https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-3-plat-odette-1-768x513.jpg 768w, https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-3-plat-odette-1-1536x1025.jpg 1536w, https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-3-plat-odette-1.jpg 2000w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>This experience helped her take the full measure of her passion for hospitality, and prompted her to start back from the bottom \u2013 working as a waitress \u2013 in an Italian restaurant, where her commitment and natural skills quickly led her to oversee VIP customers. A definite confidence boost that played a big role:<\/p>\n\n\n\n<p>&#8221; The first time a Chef and a Manager acknowledged that I was good at my job truly helped me feel legitimate. It gave me confidence, and truly lifted me up.&#8221;<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>\u00ab It&#8217;s something I always think about whenever we welcome young people into the team: building someone\u2019s self-confidence can change everything!\u00bb<\/p>\n<\/blockquote>\n\n\n\n<p>This willingness to pull people up is a particularly valuable skill as a team manager: <strong>trust is built over time, and a positive comment can help people give their best<\/strong> \u2013 male or female.<\/p>\n\n\n\n<p>Though she was becoming increasingly aware of her abilities, Ling hadn\u2019t yet set her sights on high-end gastronomy. It is J\u00e9r\u00f4me Desfonds, her manager at \u201cAu Petit Salut\u201d where she worked as headwaitress, who advised her to take an interest in the fine-dining industry. In this French restaurant in Singapore, she was introduced to cheese tasting, one of her great passions, which she managed at Odette for a long time: \u201cI learned to love it through tasting, especially Bernard Antony&#8217;s fourme d\u2019Ambert.\u201d At the confluence of the dining room and kitchen, the cheese platter is too often neglected by restaurants, even though it is a core part of the customer&#8217;s experience: a key asset that should be used more often to enhance the room staff\u2019s know-how and offer an additional moment to bond with the guests.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"731\" height=\"1024\" src=\"https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-4-plat-chef-1-731x1024.jpg\" alt=\"image 4 plat chef\" class=\"wp-image-41865\" srcset=\"https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-4-plat-chef-1-731x1024.jpg 731w, https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-4-plat-chef-1-214x300.jpg 214w, https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-4-plat-chef-1-768x1075.jpg 768w, https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-4-plat-chef-1-1097x1536.jpg 1097w, https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-4-plat-chef-1-1463x2048.jpg 1463w, https:\/\/lesgrandestablesdumonde.com\/wp-content\/uploads\/2019\/10\/image-4-plat-chef-1-scaled.jpg 1829w\" sizes=\"(max-width: 731px) 100vw, 731px\" \/><\/figure>\n\n\n\n<p>Her strong character and attention to detail made the difference and led her to apply for a job at Jaan, the Swisshotel restaurant where Julien Royer already worked. In the meantime, her manager, J\u00e9r\u00f4me Desfonds, had become\u2026 her other half: &#8220;He lifted me up, seeing in me the qualities needed to succeed.&#8221; At Jaan, she went from <strong>head waiter<\/strong> to head waiter for two years, then embarked on the incredible adventure of <strong>Odette<\/strong>, quickly awarded two Michelin stars just 9 months after its opening, and most recently three. At the heart of the National Gallery in Singapore, this French embassy has made delicacy, precision, and elegance its trademark, values \u200b\u200bthat the team shares in perfect harmony with <strong>chef Julien Royer.<\/strong><\/p>\n\n\n\n<p>A common thread binds Ling&#8217;s varied experiences: <strong>caring for the well-being of others<\/strong>, caring for those in her care, <strong>both customers and teams<\/strong>. The most striking thing when taking the time to chat with Ling is her modesty and uprightness, how her energy is always focused on the needs of others, not forgetting her elegant determination. Looking back to her very first vocation working with children, one can easily realise that caring for others has remained a guiding principle in her know-how.<\/p>\n\n\n\n<p>To be a good waiter, you must first of all \u201c<strong>make people feel your hospitality and want to come back\u201d<\/strong>. A role to coordinate closely with the chef, since \u201cyou are their messenger, you are there to help customers understand the stories behind the dishes, to convey the chef&#8217;s message, the meaning behind the place, the project&#8230;\u201d<\/p>\n\n\n\n<p>Does this mean you have to take a back seat to be a good messenger? Not at all! \u201cAfter all, a restaurant is like a play, in which I have a role. But it\u2019s not an act: I always tell the truth. Every day is different, the tasks differ but the objective stays the same : to question and improve what is already in place, <em>\u201c<\/em>to pay attention to the smallest details, which often seem irrelevant to others\u201d.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>Planning, organising, keeping an eye on the dining room (watch how she almost imperceptibly readjusts a tablecloth as she walks by) and the well-being of her team: her job is to be everywhere, absolutely essential&#8230; and at the same time almost unnoticeable from the outside world.<\/p>\n<\/blockquote>\n\n\n\n<p>She humbly advises all women in the industry to invest themselves fully, above all to prove to themselves what they are capable of, and to show both kindness and strength of character: \u201cMy mother, who is now retired, used to work two jobs. I know what it\u2019s like to work hard. She taught me to know what I wanted, what should not be done at the expense of others. <strong>Caring is the key to success.
