More than 200 exceptional restaurateurs gathered across 28 countries.

Together, we form an independent community that champions a certain vision of gastronomy: one of excellence, transmission, and creativity.

We question the role of the restaurateur today, explore the major challenges of our profession, and envision the future of haute cuisine.

To foster this reflection, we organize VARIOUS international events, produce editorial content, host a series of conferences, and create spaces for dialogue among those who, every day, keep the art of hospitality alive.

In 1954, during a friendly discussion, they decided to unite to defend the values of great gastronomy and the art of living. Thus, Jean Barnagaud (Prunier), André Vrinat (Taillevent), Claude Terrail (La Tour d’Argent), Raymond Oliver (Le Grand Véfour), René Lasserre (Lasserre), and Louis Vaudable (Maxim’s) created the association “Traditions et Qualité”.

Raymond Thuillier of L’Oustau de Baumanière became the first regional member. The same year, a first guide for the general public compiled practical information for the nineteen associated establishments (nine in Paris and its surroundings, ten in the provinces).

The association is opening up to members outside France, starting with La Villa Lorraine by Marcel Kreusch and Camille Lurkin in Belgium. This expansion marked teh beginning of global recognition for French culinary excellence and its values of quality and tradition.

At Le Grand Véfour, on his table’s tablecloth, Jean Cocteau drew the blue white and red cockerel that became the association’s logo.

Jean-Pierre Haeberlin, owner of the Auberge de l’Ill with his brother Paul was elected for the first of his five terms as president.

For the association’s 60th anniversary, the annual congress took place in Bristol. It was
the chance to pay tribute to Jean-Pierre Haeberlin, who died this year. David Sinapian from Pic was elected president for his first term.
