Under Bérangère Loiseau’s leadership, the Burgundy house combines tradition and innovation, telling the story of Bernard Loiseau. Patrick Bertron who has been in charge of the establishment’s culinary heritage for over forty years is now passing on the torch to his right-hand man Louis-Philippe Vigilant. Louis-Philippe’s mission will be to perpetuate and build upon Loiseau’s legacy: straightforward, distinctive tastes, delicious sauces, and exceptional produce deeply rooted in the local terroir.
